Cricket Pumpkin Bread

Tis' the season for pumpkin... everything! Even though I just posted a pumpkin pancake recipe, I couldn't help myself but post another pumpkin recipe. Let's face it, we're aren't tired of pumpkin yet!

Ingredients:
  • 1 1⁄2 cups flour
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 cup pumpkin puree
  • 1⁄2 cup olive oil
  • 2 eggs, Beaten
  • 1⁄4 cup water
  • 1 tbs pumpkin spice
  • 1⁄2 cup almonds (optional)
  • 3 tbs Cricket Power Powder
Directions:
  1. Preheat oven to 350°F.
  2. Sift together flour, salt, sugar, cricket powder and baking soda.
  3. In a separate bowl combined pumpkin, oil, eggs, water, and pumpkin spice.
  4. Then, combined with dry ingredients but, do not mix too thoroughly. Stir in almonds.
  5. Pour into a well-buttered 9x5x3 inch loaf pan. Bake 50-60 minutes until a thin skewer poked in the very center of the loaf comes out clean.

Jumpin' Pumpkin Pancakes

Ingredients:
1 1/2 Cups Organic 6 Grain Pancake Mix
1 Cup Almond Milk
1 Egg White
3/4 Cup Pumpkin
3 tbs Cricket Power Powder
1 tbs Pumpkin Pie Spice





Directions:
In a medium sized bowl, mix pancake mix, almond milk, egg white, and pumpkin. Once mixed, sprinkle in cricket powder and pumpkin pie spice while stirring consistently. Heat a medium sauce pan on medium heat and spray with cooking spray. Spoon mix into pan at preferred size, flip when golden brown and repeat on other side. Serve with Agave Syrup.

Cricket Battered Shrimp

1 lb Shrimp- Deveined and Peeled
2 tbs Extra Virgin Olive Oil
3/4 cup Bread Crumbs (preferably seasoned)
1/4 cup Cricket Power Powder

In a bowl, mix bread crumbs and Cricket Power Powder. In seperate bowl, lightly coat shrimp with Olive Oil. Dip shrimp into bread crumb and Cricket Power Powder mixture until battered. Place shrimp into frying pan over medium heat. Cook shrimp for around 5 minutes on both sides. Serve warm and ENJOY!

Oatmeal Cricket Muffins

1/2 cup Oatmeal
2 tbs Cocoa
3 tbs All Natural Peanut Butter
1/4 cup Stevia in the Raw
1/2 cup Egg Whites
1 cup Semi Sweet Chocolate Chips
20 grams Cricket Power Powder

Add all ingrediants except chocolate chips into a food processor and process. Add chocolate chips and then scoop mixture into muffin pan. Bake at 350 degrees fahrenheit for 20 minutes or until baked through.

1 Frozen Banana
2 tbsp PB2 Powder
1 tbsp Unsweetened Cocoa Powder
2 Caramel Rice Cakes
2 cups Almond Milk
2 cups ice

Macros: 447 calories 33.5 g Protein 59 g Carbs 11 g Fat
*For a lower carb option, exclude the rice cakes*
